Instead of being "all-purpose," many of these heirlooms are ideally suited for a particular culinary use. The word lithograph is derived from two ancient Greek words: lithos meaning stones, and graphien meaning to write. Adapted to grow in particular microclimates, they come in all shapes and colors, from the creamy Great White Beefsteak to the lemon-yellow Wonder Light and the brick-red Debarao. But over the past 20 years or so, many pre-hybrid "heirloom tomatoes" have been making a comeback.
